Grilled Shrimp — Pirates Delight

This is my own grilled shrimp recipe. I use medium to large shrimp for grilling, small or popcorn-sized are not suitable. To make Pirates Delight, I marinate the shrimp beforehand for one hour in Honey Mustard salad dressing. When I am ready to cook, I will alternate a piece of onion, a piece of yellow pepper (if you cannot find a yellow pepper, use green or red), and the shrimp on a skewer. This works on indoor grills as well as outdoor, by the way. The dressing usually contains just enough oil to prevent the shrimp from sticking but if you are worried about it, use release spray. I grill my shrimp until they are just done, because they will continue cooking after I take them off the heat. The vegetables are to be crisp, not soggy. The shrimp will take on a golden dollar color (hence the name Pirates Delight) because of the marinade, which will give them a great flavor. Serve with side salad and crusty bread.
